Slurpilicious and refreshing bowl of Liang Fen 凉粉
Zutaten
- Mung bean1 Tasse
- Garlic2
- Salt½ TL
- Toasted sesame oil1 EL
- Vinegar2 EL
- Soy sauce2 EL
- Sugar1 ½ TL
- Chile oil with sediment
- Scallion · chopped1 Handvoll
- Peanut · toasted
- Sesame seed
Zubereitung
- Whisk the starch with 1 cup of the water in a bowl until no lumps remain.
- Heat the rest of the water in a large pot until tiny bubbles form on the bottom.
- Give the starch mixture a final whisk, then slowly pour it into the pot while stirring. Lower the heat to low and use a silicone spatula.
- Stir gently for 3 to 5 minutes, until it becomes a semi-translucent paste.
- Transfer to a ceramic or stainless steel bowl and let it set at room temperature for 2 to 3 hours. An ice bowl placed under it can speed this up.
- Meanwhile, make the sauce: put the minced garlic, salt and sesame oil in a bowl and crush the garlic with the back of a spoon. Add the vinegar, soy sauce and sugar, then dilute with ½ cup of water (add more for a lighter sauce). Refrigerate until needed.
- Once set, loosen the jelly from the bowl and invert it onto a plate.
- Dab the jelly with water, then cut into shapes with a jelly scraper or knife.
- Place the noodles in a bowl, ladle over the sauce, and top with chile oil with sediment, chopped green onions, sesame seeds and toasted peanuts. Serve cold.
