- Aleppo pepper¾ tsp
- Salt
- Black pepper · ground
- Labneh1 ½ cups
- Mint⅓ cups
- Pistachio · toasted roughly chopped⅓ cups
Instructions
- Grill the zucchini: trim the ends, cut each zucchini in half crosswise and gently smash each piece with a meat mallet to leave large pieces with craggy edges.
- Whisk the olive oil, lemon zest and juice, garlic, za'atar, Aleppo pepper, 1 teaspoon salt and several grinds of black pepper in a 9x13-inch baking dish. Add the zucchini and toss to coat. Cover and refrigerate for 30 minutes to 2 hours.

- Spread the labneh in an even layer on a large platter, top with the zucchini, scatter over the mint and pistachios and sprinkle generously with za'atar.
