Smashed Potatoes with Cheesy Crust
Ingredientes
- Potato2 lb
- Extra virgin olive oil2 colheres de sopa
- Garlic2 colheres de chá
- Black pepper½ colher de chá
- Parmesan cheese¾ xícara
- Parsley2 colheres de sopa
Modo de preparo
- Bring a pot of water to a boil with 2 tsp salt (the creator used 8 cups of water in a 5-quart pot). Add the potatoes, lower the heat to a low boil and cook 25-30 minutes, depending on size, until a fork pierces them easily.
- Preheat the oven to 450°F. Drain the potatoes, place them on a lightly oiled rimmed baking sheet and let them air-dry for 5 minutes.
- Smash the potatoes to about 1/2 inch thick with a potato masher or the flat bottom of a glass, pressing gently so they stay in one piece.
- Drizzle the tops with half the olive oil and sprinkle generously with garlic salt and black pepper. Bake at 450°F for 15 minutes, until starting to turn golden.
- Flip the potatoes, drizzle the other side with the remaining oil and season with more garlic salt and pepper. Bake 12-15 more minutes, until crisp with golden brown edges.
- Sprinkle the potatoes generously with Parmesan, return to the oven for 2-3 minutes until the cheese melts, then garnish with parsley if desired and serve warm.
