- Oil1 tsp
- Paneer250–300 g
- Salta pinch
- Black pepper · powdera pinch
- Sugar1 tsp
- Mustard seed¼ tsp
- Mayonnaise¾ cups
- Yoghurt½ cups
- Vinegar¼ tsp
- Garlic4 cloves
- Sugar mustard powder1 tsp
- Ghee
- Onion
- Hot dog
- Lettuce
- Scallion
Instructions
- Heat butter and oil in a wok or deep pan over high heat until hot.
- Add the diced paneer with salt and pepper, toss over high heat for 2-3 minutes, then transfer to a bowl.
- Grind the sugar and mustard seeds into a fine powder.
- In a bowl, combine the mayonnaise, curd, salt, black pepper, vinegar, grated garlic, the sugar-mustard powder and the rest of the filling ingredients, and whisk well.
- Taste and adjust the salt if needed, then add the tossed paneer and mix well.
- Place a small bowl in the filling, put a piece of live charcoal in it, add a spoonful of ghee, cover with a lid and let the filling smoke for 3-4 minutes.
- Remove the lid, carefully discard the charcoal and mix gently. The smoked filling is ready.
- Heat oil in a deep pan over high heat until moderately hot, then add the sliced onions.
- Stir the onions frequently until they turn light golden, adjusting the heat so they do not brown too fast, and keep the heat moderate so they crisp rather than go soggy.
- When they are nearly light golden, lift them out with a spider, press out excess oil with a spatula, spread them on a tissue-lined plate and blot off remaining oil.
- To assemble, split the hot dog bun and spread soft butter inside.
- Add shredded lettuce, the smoked paneer filling, the crispy onions and spring onion greens.
