Ingredients

Instructions

  1. Set up the drum smoker for indirect cooking at 275°F (135°C) with a couple of hickory wood chunks on the hot coals.
  2. Rub the whole steak with beef broth concentrate, then season with a light coat of hot rub followed by steak rub. Let it rest about 20 minutes while the smoker heats up.
  3. Insert a probe thermometer into the centre of the steak and place it on the cooking grate.
  4. Put the stick of butter in a small aluminium pan and season it with a little steak rub.
  5. Flip the steak after 20 minutes so both sides cook evenly.
  6. Once the internal temperature reaches about 120°F (49°C), start basting with the melted butter. Flip and baste the other side.
  7. Remove the steak when it reaches about 125 to 130°F (52 to 54°C) for medium rare, or cook to your preferred doneness.
  8. Rest the steak for 15 minutes, then slice.
