Instructions

  1. Stir the water, salt, orange rind, allspice and honey in a large bowl until the salt dissolves.
  2. Add the drumsticks, weigh them down with a plate so they stay fully submerged, cover and refrigerate for 24 hours.
  3. Preheat the smoker to 120°C (250°F).
  4. Drain the drumsticks from the brine and pat them dry with paper towel.
  5. Place the drumsticks directly on the smoker grates and smoke for 1 hour 30 minutes, or until the internal temperature reaches 62°C (143°F).
  6. Move the drumsticks to a rack over a tray and raise the smoker temperature to 160°C (320°F).
  7. Combine the marmalade, orange juice, Worcestershire sauce, honey, dijon mustard and salt in a medium saucepan.
  8. Bring to a boil over high heat, stirring until well combined.
  9. Keep boiling until the glaze has reduced by half and is sticky, about 6-8 minutes, then take it off the heat.
  10. Return the drumsticks on their tray to the smoker, brush on half the glaze and cook for 10 minutes.
  11. Brush on the remaining glaze and cook for a further 10 minutes, then take them out of the smoker.
