Ingredients

Instructions

  1. Season the wings generously on all sides with the spicy ranch seasoning and the AP seasoning, then let them rest while the grill heats.
  2. Set up a two-zone fire, with one hot side and one cool side, holding 375-400°F.
  3. Place the wings on the cool side, close the lid and smoke for about 30 minutes.
  4. Flip the wings and cook another 15-20 minutes, until they reach 180-185°F inside.
  5. Working in batches, sear the wings over the hot side for 2-3 minutes per side until golden and lightly charred, using the cool side to hold them if they cook too fast.
  6. Cook until the wings reach 195°F inside.
  7. Toss the wings in the white BBQ sauce and serve hot.
