Instructions
- Render the diced bacon in a large soup pot over medium heat until golden and crispy at the edges. Add the butter.
- Add the diced onion, sliced carrots and diced celery and sauté over medium heat for about 5 minutes, until the onion is translucent. Add the garlic and cook for another minute. Add the thyme, rosemary and white wine.
- Reduce the wine for a few minutes until almost all the liquid has evaporated. Season with salt, black pepper and smoked paprika. Stir in the flour until fully incorporated.
- Gradually add the chicken broth, about 2 cups first, let it thicken for a few minutes, then add the rest. Add the cubed chicken, cover and bring to a boil.
- Simmer for 7 to 9 minutes, until the chicken is thoroughly cooked. Add the spinach and gnocchi and cook for 2 to 4 minutes, depending on the gnocchi package instructions.
- Pour in the milk and cream, then stir in the parmesan and parsley. Bring to a simmer, remove from the heat and let stand for 15 to 20 minutes to thicken.
- Serve topped with extra parmesan, black pepper, smoked paprika and parsley, with warm garlic bread on the side.
