Ingredients

Instructions

  1. Set up three bowls: mix 1/2 cup flour with 1 tsp salt and 1/4 tsp pepper in the first; beat the two eggs with a fork in the second; put 1 1/2 cups panko in the third.
  2. Dredge a zucchini slice fully in the seasoned flour and shake off the excess.
  3. Dip the floured slice in the beaten egg with a fork, turning to coat, and let the extra egg drip off.
  4. Coat all sides of the slice in panko, scooping crumbs over the top to help. Set it on a platter and repeat with the remaining rounds.
  5. Heat a large, heavy non-stick skillet over medium heat and add about 1/4 inch of oil. Heat the oil to 350°F, or until a crumb sizzles when dropped in.
  6. Fry the zucchini in a single layer in batches for 3 minutes per side, or until golden brown on both sides. Lower the heat if it browns too fast.
  7. Drain the fried zucchini on a rack set over paper towels, and repeat with the rest. Serve warm.
  8. Whisk the mayonnaise, the pressed garlic clove, the lemon juice, 1/4 tsp salt and 1/8 tsp black pepper in a small bowl until combined. Serve with the zucchini.
