Soba Sushi Recipe - Japanese Cooking 101
Ingredients
- Dried Soba2 bunches
- Rice wine vinegar2 tbsp
- Sugar2 tsp
- Salt¼ tsp
- Roasted seaweed3
- Tamagoyaki
- Cucumber
- Crab
- Soy sauce
- Wasabi paste
Instructions
- Cook the soba according to the package. Meanwhile, mix the rice vinegar, sugar and salt in a medium bowl.
- Drain the soba, rinse under running water and drain very well. Add to the vinegar mixture and leave for a couple of minutes.
- Move the soba to a paper-towel-lined plate and let it dry a little.
- Cut the tamagoyaki and cucumber into thin long strips about 8 cm long and 1 cm thick. Pieces may be joined end to end to reach a total length of about 8 cm.
- Lay a sushi mat flat with the bamboo slats running left to right. Place a sheet of nori with one short edge near you.
- Spread about one third of the soba over the nori, parallel to the slats, leaving about 2.5 cm bare at the near and far edges.
- Place the tamagoyaki, a cucumber strip and a crab stick side by side in the middle of the soba. Hold the filling down and roll away from you, tightening the roll as you go like a roll cake. Remove from the mat.
- Cut the roll into rounds about 3-4 cm thick. Serve with soy sauce and wasabi if you like.
