Soboro Don: Traditional Japanese Comfort Food 鶏そぼろ丼
Ingredients
- Ground chicken½ lb
- Ginger1 inch
- Sake1 tbsp
- Mirin1 tbsp
- Sugar1–1 ½ tbsp + 1 tbsp
- Soy sauce2 ½ tbsp
- Egg3
- Salt¼ tsp
- Rice · cooked2
- Pea2 tbsp
Instructions
- Grate the ginger on a ceramic grater until you have 1 tsp of grated ginger with its juice.
- With the heat off, combine the ginger, ground chicken, sake, mirin, 1 to 1½ Tbsp sugar and 2½ Tbsp soy sauce in a medium saucepan.
- Over medium-low heat, stir constantly with long chopsticks, breaking the meat into fine crumbles, for about 3 to 4 minutes.
- Keep cooking until most of the liquid has evaporated and the chicken is glossy and glazed, about 2 to 3 minutes. Take off the heat and set aside.
- In another cold medium saucepan, off the heat, beat the eggs, 1 Tbsp sugar and ¼ tsp Diamond Crystal kosher salt with long chopsticks until the sugar dissolves and the mixture is smooth.
- Over medium-low heat, stir the eggs constantly, scraping the bottom and sides, and break up large curds.
- Remove from the heat as soon as the eggs are just barely set and still look moist, not dry.
- Divide the cooked rice (2 servings) between two donburi bowls. Spoon the chicken over one half and the eggs over the other half.
- Arrange 2 Tbsp cooked green peas in a line down the middle and add pickled red ginger on top if you like.
