Soft & Buttery Kleicha (Iraqi Date Cookies)
Ingredients
- Flour3 ½ cups
- Butter2 sticks
- Yeast½ tsp
- Cardamom · ground1 ½ tsp
- Sugar1 tsp
- Salt½ tsp
- Milk½ cups
- Date2 ½ cups
- Canola oil1 tbsp
- Egg1
Instructions
- In a large bowl, mix the flour with the melted butter, yeast, cardamom, sugar, salt and milk, combining with a spatula and then your hands until a dough forms. It should not be sticky; do not overwork it.
- Cover the bowl and let the dough rest for 30 minutes while you make the filling.
- Remove the seeds from the dates and blend them in a food processor with the ground cardamom, oil and water until smooth and spreadable. If it is not smooth enough, add 1 more tablespoon of water.
- Preheat the oven to 350°F and line two baking sheets with parchment paper.
- Divide the dough into 2 pieces. On a floured surface, roll one piece into a thin rectangle, trimming the edges if you like for a clean shape.
- Spread half of the date paste over the dough. Roll it into a log starting from the long side, then slice it into pieces less than 1 inch wide.
- Repeat with the second piece of dough and the remaining date paste.
- Arrange the cookies on the baking sheets and brush them with the egg yolk.
- Bake at 350°F for 20 to 25 minutes, until golden.
