Sooji Halwa Recipe (Semolina Halwa)
Ingredients
- Semolina1 cup
- Ghee½ cups
- Sugar¾–1 cup
- Cashew⅓ cups
- Almond8–10
- Raisin2 tbsp
- Cardamom · powder½ tsp
Instructions
- Heat the ghee in a pan. Fry the cashews until light golden, then stir in the almonds and raisins.
- Fry until the raisins plump. Set aside some nuts and raisins for garnish if you like.
- Lower the heat and add the semolina to the ghee. Fry on low to medium, stirring constantly.
- Meanwhile, heat the water until very hot but not boiling.
- When the semolina is light golden and aromatic, carefully pour in all the hot water at once.
- Stir well to avoid lumps. Cover and cook until the water is absorbed, a few minutes.
- Stir in the sugar and cardamom powder. The halwa will turn runny. Taste and add more sugar if you like.
- Cover and cook until the sugar dissolves and the halwa pulls away from the pan and ghee starts to separate. Add extra ghee now if you prefer.
- Turn off the heat and stir in the rose water if using, then the reserved nuts and raisins if set aside.
- Serve hot or warm.
