Ingredients

Instructions

  1. Set an Instant Pot or multicooker to sauté on high.
  2. Mix the rub ingredients and coat the chuck roast. Add olive oil to the pot, then sear the roast 3 minutes per side without moving it. Turn sauté off.
  3. Add the remaining ingredients except the arrowroot, close the lid and cook on high pressure for 1 hour. Release pressure naturally for about 5–7 minutes, then transfer the roast to a bowl and shred it with forks, discarding large fat pieces.
  4. Mix a few tablespoons of the cooking liquid with the arrowroot, stir it back into the pot to thicken, then return the shredded meat. Let it sit 20–30 minutes, then portion the meat, potatoes and some gravy into a separate container.
  5. In a nonstick skillet over medium-high heat, cook the chopped bacon. Reduce to medium, add garlic and onion and cook until the onion is browned and somewhat translucent.
  6. Add the collard greens and chard and fold until they begin to wilt, about 3 minutes. Make a space, add the cabbage, fold everything together, season with salt and pepper, and add the chicken broth.
  7. Reduce to low, cover and simmer at least 25–30 minutes. Season to taste.
