Soul Food - Tomatoes and Okra with Shrimp
Ingredients
- Shrimp · peeled1 ¼ lb
- Salt
- Black pepper
- Olive oil2 tbsp
- Onion · diced1
- Bell pepper · diced1
- Garlic1 tbsp
- Sweet corn · frozen12 oz
- Tomato · diced1 can

Instructions
- Season the shrimp with salt and pepper.
- Heat a skillet on high. Add the shrimp and sear for 2-3 minutes until deeply browned, then remove them from the pan. They do not need to be fully cooked yet.
- Reduce the heat to medium. Once the pan has cooled somewhat, add the oil, onion and bell pepper (and garlic, if using). Cook 3-5 minutes until the onion is browned and translucent.
- Add the remaining ingredients and stir. Bring to a light simmer, cover, and cook 6-10 minutes. Reduce the heat if anything is burning, or add more broth if the mixture needs more liquid.
- Remove the lid, fold in the shrimp, cover and cook 5 more minutes until everything is cooked through.
