- Banana · mashed1 ¼ cups
- Sourdough bread½ cups
- Butter½ cups
- Sugar½ cups
- Brown sugar⅓ cups
- Egg1
- Vanilla2 tsp
- Flour1 ½ cups
- Baking soda1 tsp
- Baking powder½ tsp
- Salt½ tsp
Instructions
- Optional: let the batter rest for 30 minutes before baking for taller muffin tops. If skipping the rest, preheat the oven to 425°F (220°C) now.
- Whisk together the mashed bananas, sourdough discard, melted butter, both sugars, egg and vanilla in a large bowl.
- In a separate bowl, whisk together the flour, baking soda, baking powder and salt.
- Add the dry ingredients to the wet and fold gently with a spatula until just combined. Do not overmix.
- Cover the batter with a dry towel and let it rest for 30 minutes. Meanwhile, preheat the oven to 425°F (220°C) and line a 12-cup muffin tin with paper liners.
- Divide the batter evenly among the cups and sprinkle the tops with coarse sugar.
- Bake at 425°F (220°C) for 8 minutes. Without opening the door, lower the oven to 350°F (175°C) and bake 7 to 8 more minutes, until a toothpick in the center comes out dry or with a few moist crumbs.
- Cool in the tin for 5 to 10 minutes, then transfer to a rack.
