Sourdough French Toast Roll-Ups

By Foodies of South Africa · 40 min

Ingredients

Instructions

  1. Cut the crusts off each slice of sourdough bread.
  2. Flatten each slice with a rolling pin. Spread the softened butter over it and place about 1 teaspoon of diced fruit along the bottom edge.
  3. Roll the slice up like a Swiss roll, enclosing the fruit and sealing the edges. Repeat for all slices to make 12 roll-ups.
  4. Heat a large frying pan over medium heat and add 2 tablespoons of butter.
  5. In a bowl, whisk the egg and milk until combined. Dip each roll-up fully in the mixture, then place it in the pan. Repeat for all roll-ups.
  6. Cook the roll-ups for 4 to 5 minutes, turning occasionally until evenly browned. Cook in batches if the pan is too small.
  7. Roll each warm roll-up in the cinnamon-sugar so it sticks.
  8. Serve warm.
