Soy Braised Potatoes (Gamja Jorim, 감자조림) -- Quick, easy and delicious!
Ingredients
- Potato1 ½ lb
- Carrot1
- Chili pepper2–3
- Onion¼
- Vegetable oil1 tbsp
- Soy sauce3 tbsp
- Sugar1 tbsp
- Shaoxing wine1 tbsp
- Corn syrup1 tbsp
- Garlic · minced1 tsp
- Black pepper
- Sesame oil1 tsp
- Sesame seed · roasted½ tsp
Instructions
- Peel the potatoes and cut them into about 1-inch cubes. Cut the carrot, green peppers and onion into large chunks.
- Mix all the braising liquid ingredients except the sesame oil and seeds in a small bowl until well combined.
- Sauté the potatoes in the oil in a non-stick pan (or small pot) over medium heat for 4–5 minutes, stirring now and then so they don't stick.
- Add the sauce mixture and bring to a boil over high heat. Add the carrot, cover, reduce to medium and cook until the potatoes are nearly tender, about 5–6 minutes depending on size. They should be firm, not mushy.
- Stir in the peppers and onion and boil uncovered until the sauce reduces and thickens slightly, about 3 minutes. Stir in the sesame oil and sprinkle with sesame seeds.
