Soya chunks manchurian recipe | Soya manchurian recipe | Soya chunks recipe
Ingredients
- Soybean¾ cups
- Garlic · paste2 tbsp
- Chili powder½–¾ tsp + ¼–½ tsp
- Black pepper · powder¼ tsp
- Flour2 ¼ tbsp
- Salt
- Oil1 tbsp
- Ginger½ tbsp
- Scallion¼ cups
- Bell pepper¼ cups
- Tamari1 tsp
- Hot sauce1 tbsp
- Tomato sauce½–¾ tbsp
- Vinegar1 tsp
- Sugar½ tsp
- Pepper¼ tsp
Instructions
- Bring 3-4 cups of water to a boil, add the soya chunks, and let them rest until soft.
- Squeeze out the excess water from the chunks. Rinse well in a pot of water and squeeze again to remove excess water.
- Put the chunks in a bowl with the salt, ginger garlic paste, red chilli powder and cornflour, and mix well. If needed, sprinkle in a little water so the flour binds the chunks.
- Set aside for 10 minutes while you prepare the garlic, onion and capsicum for the sauce.
- Heat oil in a kadai over medium heat and fry the chunks until golden and crisp. Drain on kitchen tissue and set aside.
- Mix 3/4 tsp cornflour into 1/2 cup water until smooth, and set aside.
- Heat 1 tbsp oil in a pan. Add the garlic and sauté for 1 minute. Add the spring onions and sauté on high heat for about 1 minute until fragrant. Add the capsicum and sauté for 2-3 minutes until aromatic.
- Add the soy sauce, vinegar, chilli sauce and tomato sauce. Stir the cornflour mixture well and pour it in. Add chilli powder if you want a deeper colour.
- Lower the heat and stir well. Cook until the sauce thickens. Taste and add sugar and salt if needed; the sauce should be slightly sour, sweet and hot.
- When the sauce has thickened, add the coarsely crushed pepper and mix. Let it cool slightly, then add the crisp fried soya chunks and mix well.
- Garnish with spring onion greens.
