Ingredients

Instructions

  1. Bring about 5 litres of water to a boil in a pot over medium-high heat.
  2. Finely slice the garlic and chop the chillies and parsley into small pieces.
  3. Drizzle extra virgin olive oil into a large, deep frying pan on low heat. After about a minute, add the chilli, garlic and parsley.
  4. Add cracked black pepper and mix well with a wooden spoon.
  5. Cook for about 5 minutes, stirring now and then. If the garlic starts to brown, add a drop or two of water carefully.
  6. Once the water boils, add rock salt and stir, then add the spaghetti and cook according to the packet instructions until al dente.
  7. Drain the pasta and add it to the frying pan, adding a little pasta water as you go.
  8. Toss well with tongs, swirling the pasta so the oil and garlic coat the strands evenly.
