Ingredients

Instructions

  1. Cut the Spam into slices 1/2 inch (1.2 cm) thick.
  2. Heat 1 teaspoon oil in a frying pan over medium heat and cook the Spam until lightly browned on both sides.
  3. Beat the eggs lightly with the salt and mirin.
  4. Heat 1 teaspoon oil in a rectangular tamagoyaki pan, pour in half the egg mixture, and cook it into a square sheet, flipping to cook both sides.
  5. Lay a sheet of nori on plastic wrap with one corner pointing toward you. Put 1/2 cup rice in the center and flatten slightly.
  6. Top the rice with 1 piece of Spam, 1 sheet of cooked egg and 1 lettuce leaf. Cover with another 1/2 cup rice and gently flatten without squashing.
  7. Fold the four corners of the nori into the center, then wrap the whole package tightly in plastic wrap.
  8. With the plastic still on, cut the package in half.
  9. Repeat with the remaining ingredients.
