Spanish Cod and Shrimp Skillet | Packed with Flavors & EASY to Make
Ingredients
- Extra virgin olive oil5 tbsp
- Onion2
- Garlic6 cloves
- Flour½ tbsp
- White wine½ cups
- Thyme · dried½ tsp
- Chili flake · crushed¼ tsp
- Fish stock1 cup
- Cod4
- Shrimp1 lb
- Salt
- Black pepper
- Parsley · chopped2 tbsp
- Lemon1 tsp
Instructions
- Heat a large frying pan over medium heat and add the olive oil.
- After a couple of minutes, add the sliced onions and stir, then keep stirring every 1 to 2 minutes so they saute evenly.
- Meanwhile, pat the cod fillets completely dry on paper towels and season both sides with salt and pepper. Pat the shrimp dry and season only one side with salt and pepper.
- After about 10 minutes, when the onions are translucent, add the chopped garlic and stir constantly for 1 minute. Add the flour and stir constantly for 1 minute, then add the white wine, dried thyme and crushed red pepper and keep stirring.
- When the alcohol has cooked off, about 3 minutes, add the fish broth and stir gently for 4 to 5 minutes until the sauce is slightly creamy. Season with salt and pepper and stir.
- Place the cod fillets in the pan in a single layer and gently flip each one. Add the shrimp in a single layer, cover the pan, lower to medium-low heat and simmer 5 to 6 minutes, until the cod and shrimp are just cooked through.
- Meanwhile, make the garlic sauce: in a mortar, pound the chopped garlic, parsley and a pinch of salt into a paste, then stir in the olive oil and lemon juice.
- Once the fish and shrimp are just cooked, remove the pan from the heat, spoon the garlic sauce over the cod and serve at once with lemon wedges.
