Spanish Cod with Flavorful Vegetables
Ingredients
- Extra virgin olive oil2 tbsp
- Onion1
- Garlic4 cloves
- Bell pepper1
- Potato1
- Tomato2
- Paprika · smoked1 tsp
- Cod2
- Parsley
- Salt
- Black pepper
Instructions
- Roughly chop the onion and garlic, finely chop the red bell pepper, and cut the peeled, washed and dried potato into rounds about 0.635 cm (1/4 inch) thick.
- Heat a large frying pan over medium heat and add 2 tbsp (about 35 ml) extra virgin olive oil.
- After 1 minute, add the onion, garlic and red pepper and stir them into the oil. After about 4 minutes, when they are lightly browned, stir in 1 tsp smoked sweet Spanish paprika briefly.
- Add the 2 tomatoes, finely grated, and simmer until they have slightly thickened, about 3 minutes.
- Add the potato slices and season with sea salt and black pepper, mixing gently. Pour in about 600 ml (2 1/2 cups) cold water, or more, so the ingredients are fully covered, and arrange the potatoes in a flat layer.
- Cook for about 20 to 25 minutes until the potatoes are al dente.
- Add the cod fillets, seasoned with sea salt and black pepper, in a single layer. Cover, lower the heat to low and simmer for 4 to 5 minutes, until the cod is fully cooked through. Remove from the heat.
- Transfer the vegetables to serving dishes, top with the cod fillets and a generous amount of finely chopped parsley.
