Modo de preparo
- Heat a large frying pan over medium heat and add 2 tbsp (30 ml) of the olive oil.
- Finely chop the onion and roughly chop the garlic.
- Add the onion and garlic to the hot pan and stir constantly. When the onion is translucent (3 to 4 minutes), add the wine, dried thyme and bay leaf, stir, and simmer.
- When the alcohol has cooked off (about 3 minutes), add the frozen peas and stir, then stir every 1 to 2 minutes.

- When the oil is hot, crack in the eggs and leave them undisturbed for 1 to 2 minutes, until the underside is lightly crisp. Spoon some hot oil over the eggs, then remove them and season with sea salt and black pepper.
- Once the peas have cooked 6 to 7 minutes and are tender, season them with sea salt and black pepper, stir, and remove from the heat.
- Spoon the peas into shallow bowls, top each with a fried egg, scatter a few peas around the edges of the egg, and sprinkle with chopped chives.
