Spanish Garlic Spaghetti | Seriously GOOD 20 Minute Pasta Recipe
Ingredients
- Spaghetti8 oz
- Extra virgin olive oil3 tbsp
- Garlic1 head
- Paprika · smoked½ tsp
- Thyme · dried½ tsp
- White wine½ cups
- Parsley
- Manchego cheese · grated¼ cups
- Salt
- Black pepper
Instructions
- Fill a stock pot a little over halfway with water, add generous sea salt and bring to a high heat.
- Thinly slice the garlic cloves and finely chop the parsley.
- When the water boils, add the spaghetti and stir so it is submerged. Stir every 2 to 3 minutes so it cooks evenly and does not clump.
- Meanwhile, heat the olive oil in a large frying pan over medium heat.
- After a couple of minutes, add the sliced garlic and stir every 30 seconds. Cook 3 to 4 minutes until lightly browned.
- Add the dried thyme and smoked paprika and stir briefly. Pour in the white wine, season with sea salt and black pepper, and simmer without stirring for 3 minutes, until the wine has reduced by half. Turn off the heat.
- When the spaghetti is al dente, transfer it straight from the pot into the garlic pan. A little starchy water is fine. Add about 1/4 cup (15 grams) of chopped parsley and mix well.
- Divide among serving dishes, top with grated Manchego and serve immediately.
