Spanish GARLIC Sweet Potatoes | Addictively Delicious & EASY to Make
Ingredients
- Sweet potato3
- Extra virgin olive oil1 cup + 2 tbsp
- Garlic8 cloves
- Parsley · chopped2 tbsp
- Salt
- Black pepper
Instructions
- Heat 1 cup (240 ml) olive oil in a large frying pan over medium heat.
- Cut the sweet potatoes into rounds 1/4 inch (0.625 cm) thick. Rinse them in cold water for about 1 minute, until the water runs clear, then pat them completely dry on a dish towel.
- Once the oil is hot, add the sweet potato slices and toss to coat in oil. Stir every 2 to 3 minutes so they brown evenly.
- Meanwhile, pound 2 roughly chopped garlic cloves in a mortar with the parsley and a pinch of salt until well mashed. Stir in 2 tbsp (30 ml) olive oil.
- Fry the sweet potatoes for 20 to 25 minutes, until lightly golden and cooked through (a toothpick should pierce them easily). Remove them from the pan and set aside.
- Strain the oil from the pan through a fine sieve into a heatproof bowl, so it can be reused in future recipes.
- Return the pan to medium heat and add 2 tbsp (30 ml) of the strained oil. Add the 6 roughly chopped garlic cloves and stir constantly.
- After 1 to 2 minutes, when the garlic is lightly sautéed, return the sweet potatoes to the pan, season with salt and pepper, and mix gently.
- Transfer to a large serving dish and spoon the garlic and parsley sauce over the top.
