Spanish Salmon and Spinach | Healthy & Delicious 30 Minute Recipe
Ingredients
- Extra virgin olive oil4 tbsp
- Salmon4
- Onion1
- Garlilc4 cloves
- Paprika · smoked1 tsp
- Cumin · ground½ tsp
- Tomato2
- Spinach10 oz
- Salt
- Black pepper
- Garlic2 cloves
- Saffron¼ tsp
- Mayonnaise½ cups
- Lemon1 tsp
Instructions
- Heat a large frying pan over medium heat.
- Pat the salmon fillets dry, rub them with a little olive oil, and season with sea salt and black pepper.
- Place the salmon in the hot pan in a single layer and cook 1 minute per side. Remove and set aside.
- In the same pan over the same heat, add 2 tbsp (30 ml) olive oil, then the onion and garlic. Stir constantly until the onion is translucent, about 3 to 4 minutes.
- Add the paprika and cumin and stir quickly. Add the finely grated tomatoes, stir, then simmer without stirring.
- Roughly chop the spinach.
- When the grated tomato has slightly thickened, about 4 minutes, add the spinach in batches, stirring until it wilts. Do not overcrowd the pan.
- Once all the spinach is lightly wilted, season with sea salt and black pepper and stir. Return the salmon to the pan in a single layer, cover with a lid and simmer.
- Make the aioli: in a mortar, crush the 2 cloves of garlic with the saffron and a pinch of sea salt with a pestle into a paste. Mix in the mayonnaise, lemon juice and 1 tbsp (15 ml) olive oil, season with sea salt and black pepper, and stir until creamy.
- When the salmon is fully cooked through, about 3 to 4 minutes, remove from the heat, transfer to serving dishes and top with the saffron aioli. Serve immediately.
