Spanish Spinach and White Beans | Heart-Healthy & Packed with Goodness
Ingredients
- Extra virgin olive oil2 tbsp
- Onion1
- Garlic6 cloves
- Sherry vinegar1 tbsp
- Paprika · smoked1 tsp
- Cumin · ground½ tsp
- Tomato4
- Spinach10 oz
- White bean1 can
- Salt
- Black pepper
Instructions
- Heat the olive oil in a large frying pan over medium heat.
- Finely chop the onion, thinly slice the garlic and finely grate the tomatoes.
- Add the onion and garlic to the hot pan and stir constantly. When the onion is translucent after 3 to 4 minutes, add the sherry vinegar, paprika and cumin and stir quickly. Add the grated tomato and a pinch of sea salt, stir, and let it simmer.
- Roughly chop the spinach while the tomato simmers.
- When the grated tomato has slightly thickened, after about 5 to 6 minutes, add the spinach in batches, stirring it in so it wilts easily and does not spill out of the pan.
- Once all the spinach is added and lightly wilted, add the drained and rinsed white beans. Season with sea salt and black pepper and stir until well mixed.
- Spoon into shallow bowls and serve warm or at room temperature.
