Special Fried Rice Recipe (Cantonese Style)

Ingredients

Instructions

  1. Slice the Cantonese sausage, cured bacon and soaked mushrooms thinly.
  2. Separate the stems and leaves of the Chinese broccoli. Dice the stems into thin rounds and roughly chop the leaves.
  3. Whisk the 2 eggs until no streaks of white remain.
  4. In a wok over medium heat, stir the sausage, cured bacon and mushrooms for a few minutes, until the sausage and bacon turn slightly translucent. Do not overcook them, as they burn easily.
  5. Turn the heat to high. Push everything aside, pour about 2 tbsp of oil into the empty space and add the eggs. Stir quickly to break them into small pieces. Add more or less oil depending on how fatty the cured meat is.
  6. Add the broccoli stems, garlic and 2 to 3 tbsp of the mushroom soaking liquid. Stir until most of the liquid has evaporated.
  7. Push everything aside and add the day-old rice. Stir for a few minutes until the grains are separate and jumping in the wok. Season with the soy sauce and sugar.
  8. Add the broccoli leaves and stir until they wilt. Toss in the scallions.
  9. Taste and adjust the seasoning before serving, as sausage and bacon vary in saltiness.
