Ingredients

Instructions

  1. Bring a pot of water to a boil for the noodles.
  2. Quarter the eggplant. Scoop out tofu balls from the block with a melon baller.
  3. Heat a nonstick pan over medium heat. Add the avocado oil, then the eggplant and broccolini. Sauté 2-3 minutes, then set aside.
  4. Cook the round rice noodles until al dente.
  5. In another pot over medium heat, add the coconut oil and red curry paste. Sauté 4-5 minutes.
  6. Stir in the curry powder, then add the coconut milk and stir to combine.
  7. Add the vegetable stock, broccolini, eggplant, tofu puffs and tofu balls. Stir well, cover and bring to a boil.
  8. Drain the noodles when done and place them in the serving bowl.
  9. Season the broth with salt or soy sauce to taste, if needed, since the stock may already be salted. Pour the broth over the noodles and add the toppings.
  10. Garnish with bean sprouts and fresh cilantro.
