- Maple syrup½ cups
- Vanilla2 tsp
- Coconut oil · melted¼ cups
- Flour1 ¾ cups
- Baking soda1 tsp
- Cinnamon1 ¼ tsp
- Allspice½ tsp
- Ginger½ tsp
- Nutmeg¼ tsp
- Salt¼ tsp
- Apple · peeled roughly chopped1
- Pecan · chopped⅓ cups
- Cream cheese · softened4 oz
- Butter2 tbsp
- Sugar¾ cups
- Milk1–3 tsp
Instructions
- Preheat the oven to 350°F. Line an 8 ¼ x 4 ½ inch loaf pan with parchment and grease it with nonstick spray.
- Squeeze as much moisture as possible out of 1 heaping cup of shredded zucchini using a paper towel, dish towel or cheesecloth.
- In a large bowl, whisk together the zucchini, applesauce, eggs, maple syrup and vanilla. Add the melted coconut oil and mix again until well combined.
- Stir in the flour, baking soda, cinnamon, allspice, ginger, nutmeg and salt with a wooden spoon until just combined. Fold in the pecans and chopped apple.
- Pour the batter into the pan and bake for 50-60 minutes, until a tester comes out clean or with just a few crumbs. It may take about an hour depending on your oven.
- Cool the bread in the pan on a wire rack for 15 minutes, then turn it out onto the rack to cool completely.
- For the frosting, beat the cream cheese, butter, powdered sugar, vanilla, cinnamon and milk on medium speed for about a minute until smooth. If you want a warm glaze, microwave in 10-20 second bursts until warm.
- Spread or pour the glaze over the cooled bread, sprinkle with chopped pecans, then slice into 10-12 pieces.
