Ingredients

Instructions

  1. Preheat the oven to 375°F (191°C). Lightly grease a 9- or 10-inch square pan, a deep 9-inch pie dish, a 10-inch cast iron skillet, or a 2–2.5-quart baking dish.
  2. In a medium bowl, whisk together the flour, brown sugar, baking powder, cinnamon and salt. Add the melted butter and mix with a fork until clumps form. Do not overmix; freeze the topping while you prepare the filling.
  3. In a large bowl, gently mix all the filling ingredients and spread them evenly in the pan.
  4. Scatter the cold topping evenly over the filling.
  5. Bake for 40–50 minutes until the topping is golden and the juices bubble at the edges. About 30 minutes in, loosely cover with foil to stop the topping over-browning.
  6. Take out, cool on a rack for at least 20 minutes, then serve warm. Cover leftovers and refrigerate for up to 4 days.
