Preparación
- Season the chicken breasts with salt, pepper, garlic powder and onion powder, tossing to coat.
- Place each breast between two sheets of plastic wrap and pound to about ½ inch (1 cm) thick.
- Remove the top wrap. Layer 2 slices of Swiss, 2 slices of ham, another 2 slices of Swiss and 2 more slices of ham on each breast. Roll up tightly in plastic wrap, twisting and tying the ends. Chill the rolls 30 minutes to set.
- Preheat a tall pan with 2 inches (5 cm) of oil to 325°F (170°C).
- Set up three wide dishes with flour, beaten egg and panko. Coat each roll in flour, then egg, then panko.
- Fry about 5 minutes per side until evenly golden. If the centre is not yet 165°F (75°C), finish on a wire rack over a baking sheet in a 325°F (170°C) oven until it reaches that temperature.
- Make the sauce: melt the butter in a 1½-quart saucepan over medium heat and cook the garlic until soft. Add the flour and whisk 1 minute.
- Gradually whisk in the milk until smooth and thickened at a simmer. Stir in the mustard, Parmesan, salt and pepper, then remove from heat.
- Slice the chicken and serve drizzled with the sauce.
