Spicy Edamame
Ingredientes
- Edamame10–14 oz
- Salt1 colher de sopa
- QT water1
- Sambal · paste1 colher de sopa
- Garlic2 dentes
- Miso1 colher de chá
- Mirin2 colheres de sopa
- Molho shoyu2 colheres de sopa
- Vegetable oil1 colher de sopa
Modo de preparo
- Bring 1 quart (4 cups) of water to a boil in a pot over medium-high heat, then add 1 tablespoon Diamond Crystal kosher salt.
- Add 10–14 oz of frozen edamame pods without thawing. Boil, stirring occasionally, until the beans are al dente: about 1 minute for precooked pods, or 4–5 minutes for raw pods.
- Skim off any foam and debris with a fine-mesh skimmer, then drain in a colander. Do not rinse.
- Heat a large frying pan over medium heat. When warm, add 1 tablespoon neutral oil and 2 cloves minced or crushed garlic. Sauté, stirring constantly, for 30–60 seconds until fragrant.
- Add 1 tablespoon sambal oelek and 1 teaspoon miso, and stir until the miso dissolves into the paste.
- Add 2 tablespoons soy sauce and 2 tablespoons mirin and cook, stirring often, until thickened. The sauce is ready when a line drawn through it with a spatula keeps the bottom of the pan visible for 1–2 seconds.
- Add the drained edamame to the pan and toss to coat. Serve warm or at room temperature, squeezing or biting the beans out of the pods.
