- Snow pea150 g
- Spinach
- Chili flake · flakes1 tsp
- Soy sauce5 tbsp
- Oyster sauce2 tbsp
- Shaoxing wine2 tbsp
- Brown sugar3 tbsp
- Cornstarch2 tbsp
Instructions
- Freeze the sirloin for 30 minutes until firm but not rock-solid, then slice thinly across the grain.
- Heat the oil in a wok or large high-sided pan until shimmering. Fry the matchstick ginger for 2 to 3 minutes until golden and crisp. Lift out with a slotted spoon and drain on kitchen paper.
- Pour off all but 1 tbsp of oil, keeping the oil, and reheat until very hot. Season the beef with salt and pepper, fry half the beef for 3 to 5 minutes until browned, then lift out into a bowl to rest. Add 1 more tbsp oil if needed and cook the rest the same way.
- Add a little oil to give about 2 tbsp in the wok over medium heat. Fry the chopped onion for 2 to 3 minutes until just softening.
- Add the minced ginger and garlic and fry for 30 seconds.
- Add the broccoli, spring onions and mangetout and stir fry for 1 minute.
- Mix the sauce ingredients (soy sauce, oyster sauce, rice wine, brown sugar and the cornflour slurry) and add to the wok.
- Let it bubble and thicken for 1 minute, then return the beef and heat through for 1 to 2 minutes.
- Stir in the spinach, then turn off the heat.
- Top with the crispy ginger and a sprinkling of chilli flakes.
