SPICY ITALIAN SAUSAGE PASTA With Fresh Spinach
Ingredients
- Hot italian sausage · ground1 ½ lb
- Pasta1 lb
- Tomato paste3 oz
- Tomato28 oz
- Olive oil3 tbsp
- Spinach1 bunch
- Garlic3 cloves
- White wine½ cups
- Basil½ cups
- Chili flake · paste dried flakes1 tsp
- Salt
- Black pepper
Instructions
- Cook the pasta in salted water until al dente, and reserve some of the pasta water.
- In 1/4 cup olive oil over medium-low heat, saute the 3 cloves of garlic until golden. Remove the garlic.
- Add the sausage to the pan, turn heat to medium and break it apart with a wooden spoon. If using chili, add it now and saute 1 more minute.
- When the sausage is nearly cooked through (about 12 to 15 minutes), add the white wine and turn the heat to high.
- After 3 minutes, lower the heat to medium-low and stir in the tomato paste. Cook 5 minutes, spreading it across the pan. Add the crushed plum tomatoes and bring to a simmer.
- If the sauce is too thick, add 1/2 cup water to thin it.
- Remove half the sauce and set it aside. Add the pasta to the pan with the remaining sauce and cook 1 to 2 minutes more, tossing to coat.
- Add the spinach and toss until wilted. Taste and adjust salt and pepper. Serve with the reserved sauce on the side if needed.
