Ingredients

Instructions

  1. In a mixing bowl, combine 1/2 cup chopped kimchi, 1/3 cup kimchi juice, 1 minced garlic clove, 1 teaspoon sugar, 1/4 cup hot pepper paste, 2 teaspoons sesame oil, 1–2 teaspoons vinegar, and 1 tablespoon roasted sesame seeds. Mix well.
  2. Hard-boil an egg, halve it, and set aside.
  3. Cut about 1/2 cup of cucumber into matchsticks and set aside.
  4. Add about 7 oz (200 g) of noodles to boiling water and stir to keep them apart. Cover the pot.
  5. When the water boils over, uncover, stir, and cook a few more minutes until the noodles are cooked through and chewy and soft.
  6. Rinse the cooked noodles in cold water a couple of times, then drain. Cook the noodles last and eat right away, as they lose their chewiness over time.
  7. Divide the noodles between two plates, spoon the seasoning mixture on top, and add the cucumber and egg.
