Spicy Salmon Temaki Sushi (Hand Roll)
Ingredients
- Soy sauce1 ½ tbsp
- Yuzu1 ½ tsp
- Salmon375 g
- Red onion45 g
- Shiokonbu8 g
- Daikon1 packet
- Rice1
- Nori seaweed12
Instructions
- Whisk the soy sauce and yuzu kosho together in a bowl until evenly mixed.
- Cut the salmon into 1/4-inch cubes with a sharp knife, then add it to a bowl with the minced red onion, shiokonbu and the soy mixture. Stir to combine.
- Set out a clean work surface with the rice, nori, kaiware sprouts and a small bowl of water.
- Place a half sheet of nori rough side up. Spread a golf-ball-sized scoop of rice on the left half, leaving the top left corner uncovered. Wet your fingers as needed, without making the rice and nori soggy.
- Lay kaiware sprouts in the centre of the rice with the leaves pointing toward the top left corner, then top with a spoonful of the spicy salmon.
- Lift the nori into your left hand and fold the bottom right corner up to the centre.
- Wrap the top right corner over and around the filling so it meets the back of the top left corner.
- Eat immediately, as the nori loses its crispness and turns chewy.
