Ingredients

Instructions

  1. Cook the rigatoni according to the packet instructions, then drain, keeping one cup of the pasta water.
  2. Heat the olive oil in a large frying pan over medium-high heat.
  3. Add the onion, red pepper, garlic and chilli and cook, stirring often, for 5 minutes until the onion softens.
  4. Take the skins off the sausages, add the meat to the pan and fry for 5 to 6 minutes, breaking it up with a wooden spoon, until browned.
  5. Stir in the tomato purée, black pepper, chilli flakes and oregano, then add the chopped tomatoes. Bring to the boil and simmer for 5 minutes.
  6. Taste the sauce and add a little salt only if needed.
  7. Add the cooked pasta, cream and half the basil and stir well. Loosen with splashes of the reserved pasta water if needed.
  8. Heat for 1 to 2 more minutes until the cream is hot, then turn off the heat.
  9. Serve topped with the remaining basil and grated parmesan.
