Modo de preparo
- Preheat the oven to 400°F.
- Spray the insides of the hollowed pepper halves, place them cut-side down on a baking tray and bake for 20 minutes.
- Heat the oil in a large nonstick skillet over medium-high heat, add the sausage and cook 2 to 3 minutes until the edges are seared.
- Add the diced green pepper, onion and celery and cook 2 to 3 minutes until softened and the onion is slightly browned and translucent.
- Push the vegetables aside, add the chicken to the centre and leave it for about 2 minutes to sear, then toss everything together.
- Sprinkle in the chili powder, Italian seasoning, cayenne and fennel powder, add the rice and stir until every grain is coated.
- Add the broth and tomato paste and stir until thick and creamy, not watery. Season with salt and pepper to taste.
- Divide the filling evenly among the baked pepper halves. Cover the tray with foil and bake for 20 minutes, removing the foil for the last 5 minutes.
- If freezing, bake for 5 to 10 minutes less so the peppers do not get too soft.
