Spicy Tex-Mex Latkes for Hanukkah! Hilah Cooking
Ingredients
- Potato2 lb
- Egg2
- Onion · finely chopped¾ cups
- Cottage cheese · grated½ cups
- Serrano pepper · minced1–2
- Garlic · minced2 cloves
- Salt½ tsp
- Pepper¼ tsp
- Oil for frying1 cup
- Sour cream
- Apple sauce
- Jalapeño chili
- Cilantro
Instructions
- Coarsely grate most of the potatoes. Finely grate about 1/4 cup of potato and set it aside.
- Squeeze the grated potato in a clean towel over a bowl to remove the liquid, then let the liquid settle in the bowl.
- Mix the squeezed potato with the egg, onion, cheese, garlic, salt and pepper.
- Pour off the brown water from the bowl, keep the white starch that remains, scrape it into the potato mixture and stir.
- Heat 1/3 cup oil in a skillet over medium-high heat until a potato strip sizzles; there should be at least 1/8 inch of oil.
- Drop large spoonfuls (about 1/4 cup each) into the pan and spread into 3-inch patties.
- Fry 2 to 3 minutes until very brown, then flip carefully and cook 3 more minutes.
- Add oil as needed and fry the remaining latkes.
- Serve with sour cream, applesauce, jelly and a little cilantro.
