Ingredientes

Preparación

  1. Coarsely grate most of the potatoes. Finely grate about 1/4 cup of potato and set it aside.
  2. Squeeze the grated potato in a clean towel over a bowl to remove the liquid, then let the liquid settle in the bowl.
  3. Mix the squeezed potato with the egg, onion, cheese, garlic, salt and pepper.
  4. Pour off the brown water from the bowl, keep the white starch that remains, scrape it into the potato mixture and stir.
  5. Heat 1/3 cup oil in a skillet over medium-high heat until a potato strip sizzles; there should be at least 1/8 inch of oil.
  6. Drop large spoonfuls (about 1/4 cup each) into the pan and spread into 3-inch patties.
  7. Fry 2 to 3 minutes until very brown, then flip carefully and cook 3 more minutes.
  8. Add oil as needed and fry the remaining latkes.
  9. Serve with sour cream, applesauce, jelly and a little cilantro.
