Spicy Tomato Spaghetti | Super EASY & DELICIOUS 20 Minute Pasta Recipe
Ingredients
- Spaghetti8 oz
- Extra virgin olive oil3 tbsp
- Shallot1
- Garlic6 cloves
- Paprika · smoked1 ½ tsp
- Thyme · dried½ tsp
- Tomato sauce14 ½ oz
- Tomato · diced14 ½ oz
- Parsley · chopped2 tbsp
- Manchego cheese · grated¼ cups
- Salt
- Black pepper
Instructions
- Fill a stockpot a little over halfway with water, season generously with sea salt and bring to a high heat.
- Meanwhile, heat the olive oil in a large frying pan over medium heat.
- While the oil heats, finely chop the shallot and roughly chop the garlic.
- Once the oil is hot, add the chopped shallot and garlic and stir constantly. After 3 to 4 minutes, when lightly softened, add the hot smoked paprika, sweet smoked paprika and dried thyme and stir quickly.
- Add the tomato sauce, diced tomatoes and 2 tablespoons of chopped parsley. Season with sea salt and black pepper, stir, and lower to low-medium heat.
- When the stockpot water boils, add the spaghetti and stir every 2 to 3 minutes so it does not stick.
- When the spaghetti is just al dente (check the package time), transfer it with tongs straight into the pan of sauce. A little starchy water is fine. Turn off the heat and mix well.
- Divide the pasta among serving dishes, top with grated Manchego and fresh parsley, and serve immediately.
