Ingredients

Instructions

  1. In a saucepan, heat oil, then add peppercorns, ginger, coriander stems, carrot, bay leaves and onion and sauté for a minute.
  2. Add cauliflower trimmings, water and French beans, mix and simmer for a while. Strain the stock and set it aside.
  3. In a bowl, knead refined flour, vinegar, salt and water into a semi-soft dough. Knead in the oil again for a while, then oil the dough, cover with a damp cloth and rest.
  4. Divide the dough into small lemon-sized balls. Dust with cornstarch and roll flat into sheets. Trim the edges, cut into squares, fill with the chicken filling, brush the edges with a little water and seal tightly.
  5. For the filling, mix ginger, coriander stems, green chillies, salt, crushed peppercorns and minced chicken well.
  6. In a wok, heat oil, then cook onion and carrot for a minute. Add a little water, soy sauce and vegetable stock and simmer for 4-5 minutes. Add coriander leaves, wontons and salt and cook for another 7-8 minutes until cooked.
  7. Ladle into bowls and garnish with a coriander sprig. Serve hot.
  8. Optionally, deep-fry wontons in hot oil until golden brown and drain on absorbent paper.
