Spinach and Cheese Gozleme Recipe
Ingredients
- Flour3 cups
- Salt1 tsp
- Milk¾ cups
- Olive oil
- Onion1
- Spinach14 oz
- Feta cheese10 ½ oz
- Pepperto taste
Instructions
- In a large bowl, whisk the flour and salt, then gradually add the milk and water, mixing until a shaggy dough forms.
- Knead on a floured surface for 4 to 5 minutes until smooth and elastic, then cover and rest for 20 to 30 minutes.
- Heat olive oil in a large skillet over medium heat and soften the chopped onion for 5 to 6 minutes until soft and translucent.
- Add the chopped spinach and cook for 2 to 3 minutes until wilted and most of the liquid has evaporated. Let cool slightly, then mix in the crumbled feta and season with salt and black pepper.
- Divide the dough into 6 equal balls. Roll one ball on a floured surface into a thin rectangle about 1 to 2 mm thick.
- Spoon 2 to 3 tablespoons of filling onto one half, leaving a 3 to 4 cm border. Fold over and press the edges to seal. Repeat with the rest.
- Cook each gozleme in a hot large non-stick or cast iron pan over medium-high heat for 2 to 3 minutes per side, until golden and slightly crisp. Brush with olive oil or melted butter while cooking if you like.
- Keep cooked gozleme covered while you cook the rest, then slice into halves or quarters and serve hot.
