Steak and Guinness pie
Ingredients
- Beef · diced1 kg
- Carrot · diced1
- Onion · diced1
- Celeriac · diced1
- Guinness1 can
- Flour2 tbsp
- Salt
- Black pepper
- Rosemary · finely2 sprigs
- Puff pastry1
- Egg
- Cornstarch2 tbsp
Instructions
- Season the diced beef with salt and pepper in a large bowl, then add the flour and toss until every piece is coated.
- In a large heavy-based pot over medium-high heat, brown the beef in batches so the pan is not crowded. Set the browned beef aside.
- Add the onion to the pot and let it heat up again. Add the carrot and celeriac, season with salt, and cook for 6-7 minutes. Then stir in the rosemary.
- Return the beef to the pot, add the can of Guinness, stir well and simmer for 1.5-2 hours, until the beef is fork tender.
- Dissolve the cornflour in a little water, stir it into the beef mixture and keep stirring until the gravy thickens.
- Let the filling cool before topping it with puff pastry, since heat from the filling will melt the butter in the pastry.
- Fill the pie dish to the top with the beef and gravy, then cover with a sheet of puff pastry.
- Brush the pastry with egg wash and bake in a 180°C oven for 20-25 minutes, until the top is golden.
