Ingredients

Instructions

  1. Finely chop half the white onion and place in a bowl. Add the tomatoes, jalapeño and lime juice, season with salt and mix. Set aside.
  2. Thinly slice the remaining onion half.
  3. Heat half the oil in a large frying pan over medium-high heat.
  4. Cook the sliced onion and bell peppers, tossing for 2 to 3 minutes until softened. Season with salt and pepper.
  5. Add the garlic, half the spices and the chilli flakes and stir for another minute until fragrant. Move to a plate.
  6. Cut the steak into thin strips about 5 cm (2 inches) long. Season with some salt and the remaining spices.
  7. Heat the rest of the oil in the pan over high heat. Cook the beef in batches, 1 minute per side, setting each batch aside with the vegetables.
  8. Return all the beef and vegetables to the pan and toss quickly to heat through. Take off the heat and transfer to a serving dish.
  9. Toast the tortillas over an open flame, turning several times until they start to char. Fill with beef, top with the pico de gallo and guacamole, roll up and eat.
