Preparación
- Finely chop half the white onion and place in a bowl. Add the tomatoes, jalapeño and lime juice, season with salt and mix. Set aside.
- Thinly slice the remaining onion half.
- Heat half the oil in a large frying pan over medium-high heat.
- Cook the sliced onion and bell peppers, tossing for 2 to 3 minutes until softened. Season with salt and pepper.
- Add the garlic, half the spices and the chilli flakes and stir for another minute until fragrant. Move to a plate.
- Cut the steak into thin strips about 5 cm (2 inches) long. Season with some salt and the remaining spices.
- Heat the rest of the oil in the pan over high heat. Cook the beef in batches, 1 minute per side, setting each batch aside with the vegetables.
- Return all the beef and vegetables to the pan and toss quickly to heat through. Take off the heat and transfer to a serving dish.
- Toast the tortillas over an open flame, turning several times until they start to char. Fill with beef, top with the pico de gallo and guacamole, roll up and eat.
