Ingredients

Instructions

  1. Remove the stems from 300 grams (about 10 ounces) of shishito peppers, wash them and drain well.
  2. Place the peppers in a large bowl and add 3 tablespoons of flour (1 tablespoon per 100 grams of peppers). Toss with your hands until coated.
  3. Bring 1 cup of water to a boil in a steamer pot over high heat.
  4. Steam the peppers over high heat for 5 minutes, taking care not to overcook them. Turn off the heat, remove the lid and set aside.
  5. Heat a pan over medium heat and add 1 teaspoon sesame oil and 2 minced garlic cloves. Stir for a few seconds.
  6. Add 6 large dried anchovies with the heads and guts removed and stir for 10 seconds.
  7. Add 1/4 cup water, 3 tablespoons soy sauce and 1 teaspoon honey (or sugar) and stir.
  8. Lower the heat and simmer the sauce for 1–2 minutes.
  9. Stir in 1–3 teaspoons hot pepper flakes, to taste, or none for a mild version.
  10. Add the steamed peppers and mix well for about 1 minute.
  11. Turn off the heat, then stir in 2 chopped green onions and 1 teaspoon sesame oil.
  12. Serve some on a plate topped with roasted sesame seeds, with rice.
