Sticky Bourbon Chicken with Rice
Ingredients
- Chicken thigh1 ½ lb
- Soy sauce½ cups
- Oil¼ cups
- Vinegar¼ cups
- Whisky¼ cups
- Brown sugar¼ cups
- Ginger · crushed sliced1 tbsp
- Garlic · crushed4 cloves
- Scallion · sliced4–5
- Rice1 cup
Instructions
- The night before, whisk together the soy sauce, oil, vinegar, bourbon and brown sugar in a bowl until combined.
- Place the chicken in a baking dish with high sides and a lid, pour the sauce over it, and add the ginger, garlic and half of the green onions.
- Cover and marinate overnight, or for as many hours as you have before baking.
- On the day, preheat the oven to 350°F (180°C).
- Uncover the chicken and bake it in the marinade for 45 minutes, basting it with the sauce now and then and turning the pieces so both sides cook in the sauce.
- Cook the rice according to the package directions.
- When the chicken is cooked, switch the oven to broil and bake for another 5 to 10 minutes until the outside is nicely browned.
- Serve the chicken whole or cut, with extra sauce and the remaining green onions, over the rice.
